Premium Steak Cuts: Which One Do You Prefer?
There are many different ways to cook, dress, and eat a steak. And it all starts with the cut. From filet mignon to porterhouse, lean to deeply marbled, here are a few facts about each type of premium cut and what makes it popular.
Four Different Premium Steaks
1. Filet Mignon
This cut is typically known as the pinnacle of steaks. This could be due to its delicious, mild flavor. Or it could be how a filet mignon is always the star of the show, even when it’s wrapped in bacon or paired with heavier sides. Filet mignons are fairly small, at about 6 - 8 ounces. They are lean yet tender and can be served rare, because they don’t take as long to cook as other lean cuts.
Why it’s popular:
Filet mignon is typically the most tender, with a milder flavor than other cuts of beef.
2. Ribeye
If you have a steak lover in your circle, they’re probably ready to talk for hours about how good a ribeye is. This cut is rich in flavor, especially when grilled or pan-seared. Ribeye cuts are deeply marbled and typically about an inch thick.
Why it’s popular:
Ribeye’s popularity comes from its fatty and tender nature. Its marbling and ability to be cooked quickly make it a favorite for weekly dinners and grilling.
3. New York Strip
Cut from the top loin muscle, many think this lean cut is going to be tough. However, it is known for having an even flavor and a juicy, tender bite. This has a lot to do with the strip of fat running along the top of the cut.
Why it’s popular:
We love the New York strip for its lean and tender texture and meaty taste. It's perfect for those who want to forgo the marbling but still want a juicy cut.
4. Porterhouse
A porterhouse steak is the powerhouse cut of beef. It’s large. It’s thick. And it features TWO different steak cuts: tenderloin filet on one side of the bone, and a New York strip on the other.
Why it’s popular:
This cut is perfect for people with big appetites or those who want to share a steak with a loved one.
Which Cut of Steak Is the Best?
In our opinion, all of them!
Choosing the best cut is a personal decision, so we suggest giving them all a test to see which one you like the most.
Here are some tips to help you decide:
Looking for lean meat, either because of texture preferences or a slightly healthier cut? We suggest a filet mignon or New York strip.
Prefer fattier meats like pork or a juicy burger? We suggest a nice ribeye.
Working up an appetite? Ready to jump into the deep end of steaks? Porterhouse is what you want.
