Let's start at the beginning: 1978. Getting a quality steak was iffy. Why? There was no way to ensure the quality of the cattle, the type of cattle the steak came from, or the consistency of the cut. Enter the founders of the Certified Angus Beef brand. They collected a group of ranchers and together with a meat scientist they created a set of 10 standards to ensure only the highest quality beef made it to the table. 

The Ten Quality Standards for Certified Angus Beef

  1. Modest to high marbling (Marbling refers to the amount of fat throughout the meat.) 

  2. Medium to fine texture in the marbling (The marbling should be evenly distributed throughout the cut.) 

  3. Cattle must be less than 30 months old (for superior texture and tenderness)

  4. A 10-17 square inch ribeye area Consistent sizing ensures each steak can be the right size without excessive waste. 

  5. 1,100 carcass weight 

  6. 1 inch or less of fat thickness (so you get a steak, not a slab of fat)

  7. Superior muscling (so your steak is tender, not stringy) 

  8. Limited capillary rupture (to keep your steak juicy and tender)

  9. No “dark cutting” (so your steak stays red and juicy) 

  10. No neck hump over 2 inches (This means the meat is tender, because the cattle were not overworked.) 


If these standards sound overly exacting, that’s because they are. In fact, only 3 in 10 Angus cattle meet the standards for Certified Angus Beef. That’s how you know you’re getting the best of the best.
